In the past few interviews you have read about Chef Ram Khawas’ journey of becoming a chef and his curiosity to know things and cook until perfection. Though he is a baker at his helm but, he always loves to cook different cuisines for his guests whenever he takes out time for the same. Today we are going to know about his another recipe which is very famous in India and is loved by all. This is none other than the most famous ‘Rajputana Riyasati’ (a princely state) cuisine of Rajasthan and i.e. the Laas Maas. We will read the step by step process of it with a very simplified way, so that anyone can cook it at home with the same ingredients which they easily get in their kitchens. Chef Ram believes that cooking must be done in an easy way with simple ingredients to avoid hustle all around.

Before we move ahead of the most tantalizing recipe of the day, let’s know a bit about his yet another work experience with one of the well known celebrity entrepreneur chefs of India. It is an achievement to be discussed and showcased upon and must be kept at the world front. In the year 2015 he joined one of the most famous Olive baar and kitchen in Mehrauli area of South Delhi-India near Qutub Minar. Later, in the year 2019 Chef Ram has joined ROOH, New Delhi. This is also located in the heart of South Delhi, Mehrauli near Qutub Minar. These two luxury eating destinations are not just loved by the netizens but, are also loved by the tourists who comes to India to see the Mughal architecture-Qutub Minar.
After working with these beautiful grandeurs of Delhi, Chef Ram Khawas has worked with an award winning Chef of India. Yes, you have guessed it right, it is none other than Chef Sujan Sarker, who owns yet another beautiful and most luxurious food chains in South Delhi. One is Olive Bar and Restaurant and another one is Ek Bar, a modern Indian Gastro. They both are one of the most successful restaurants of the country and have bagged a few prestigious awards for themselves. People from the hospitality industry often die to work with Chef Sujan Sarkar’s restros and all those who have got a chance to work with him then, that is not less but really huge! Chef Sujan is also well-known for his work in London at Automat, Almada, Michelin starred Galvin at Windows and in Dubai for opening Tresind.
Well, let’s now read that for which we are actually here. Yes, the recipe of Rajasthani Laal Maas by Chef Ram Khawas.

LAAL MAAS:
INGREDIENTS:
500 gm mutton (sheep’s meat)
2 medium onion, chopped
2 medium tomato, chopped
2-3 green chilli, chopped
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
1 tsp turmeric powder
1 tsp red chilli powder
2 tbsp ghee
2 tbsp mustard oil
Salt as per taste
2 tbsp kasoori methi
2 tbsp green coriander, chopped.
INSTRUCTIONS:
- CLEAN THE MUTTON: Clean the mutton properly and mix it with chopped onion, tomato and green chilli.
- MIX THE SPICES: Mix coriander powder, cumin powder, garam masala powder, turmeric powder and red chilli powder and add it to the mutton mixture.
- HEAT UP GHEE AND OIL: Heat up ghee and mustard oil and add it to the mutton mixture.
- COOK THE MIXTURE: Heat the mixture and cook it for 10-15 minutes.
- MIX SALT AND FENUGREEK: Mix salt and fenugreek and add it to the mixture.
- Mix up green coriander and add it to the mixture.
- Now it’s Ready to Eat with Rice and Roti.
