YOUNG CHEF RAM KHAWAS DOES WONDERS IN BAKERY, A JOURNEY FROM RISHIKESH TO THE UNITED STATES OF AMERICA (PART-6): A REPORT BY KHATIBAH REHMAT.

We’ve been reading much about young Chef Ram Khawas along with his tantalizing recipes. Here, he comes up with a morden Indian street food called Star fruit bhel. In every part of India you would have tasted a different flavour of bhel but this time Chef Ram has come up with a modern twist in his taste.

INGREDIENTS:

2-3 star fruits, diced

1 cup mixed nuts (almonds, cashews, pistachios).

1 cup dried fruit (cranberries, cherries, raisins)

1/2 cup honey

1/4 cup lemon juice

1/4 cup chopped fresh mint leaves

1/4 cup grated coconut

Pinch of salt.

INSTRUCTIONS:

Step 1: Prepare the Star Fruit:

1. Wash and dry the star fruits.

2. Dice the star fruits into small pieces.

Step 2: Mix the Ingredients:

1. In a large bowl, combine the diced star fruit, mixed nuts, dried fruit and grated coconut (if using).

2. In a small bowl, whisk together the honey, lemon juice and salt.

3. Pour the honey-lemon mixture over the star fruit mixture and toss to coat.

Step 3: Garnish and Serve

1. Lemon gel, raspberry gel, apple gel and coriander cress and flower. Add the puff black rice round crisp.
