The Westin Gurgaon-Delhi and their Executive Sous Chef Ankit Malhotra has come up with a three day Pop-up on Modern Indian Cuisines at their restaurant Sunset Story, which began on Friday, 21st. February, 2025 and will end on Sunday, February, 23rd. 2025. They named this Pop-up as: ‘A Tale of Modern Indian Flavors’. A London return and now India based Chef Ankit Malhotra is an Executive Sous Chef here at Westin Gurgaon-Delhi and is trying his hands on modern Indian Cuisines with fellow Indians. We, the team of REFT Today was invited there for dining-in and tasting this cuisine which was specially curated by Chef Malhotra.

Kolhapuri Chicken Drumsticks.
He has given several Indian twists and flavours to a western palate. Whether it be a Tortellini in Tandoori Paneer/Chicken with Makhni sauce from Punjab to the Puneri Potato Wada from Maharashtra was really a twist of tasty taste which we came across. The way Chef Ankit Malhotra was pouring a broccoli soup over a hara bhara kabab was looking so skilled as in I shall keep on watching it like my favourite movie on the screen. I was so full by then that, I had to stop him until then only, we couldn’t reach to the main course. After eating that Kolhapuri Chicken Drumstick we gave a full stop to the further servings. But unlike us you don’t do that, keep a big appetite and follow the menu further and taste their main courses meals and the desserts.
