REFT TODAY IN THE HUNT OF HOME CHEFS ON WOMEN’S DAY-2021, PART-4: BY KHATIBAH REHMAT. 

TULIKA KHATTAR—RUNNER UP.

Another runner up winner of women’s day cooking competition of Fearless and Flawless group, 2021— Mrs. Tulika Khattar who speaks about her upbringing, being a single child had later married to a son of a
Sindhi family, who proved to be a supportive husband for past seven years of marriage and loves having multi-cuisines made by her wife Tulika. She adds that she was always very close towards the authentic food which made her a practitioner in preparing several food stuffs.

Her cooking skills further enhanced last year in 2020 lockdown when world kept back in their homes for keeping themselves safe from noval corona virus. Though, it was nothing but a passing of time then, but she never knew that it will take a beautiful shape in her life like this, that she will win any food competition one day. There were no restaurants, schools, colleges and offices at that time of early pandemic, but there was no other way to contain it. Each one adopted a different way to cope up with it, some of them resorted to music, books, art whereas, Tulika found solace in cooking.

She is not just a home maker with several cooking skills but, had also been an HR professional with various companies like Credit Suisse Bank, HSBC Bank and now working with Accenture and have recently been promoted and recognised for her efforts. All in all, Tulika is an all rounder who takes care of her family and of her profession as well. Her win was nothing but her utmost efforts and dedication towards living a lively life. One must learn from the adorable atmosphere which she has made for her loved ones and for herself.

Some of the food prepared by Tulika in recent are:

1. Sindhi curry
2. Kadha prasad (Aate ka halwa)
3. Pani puri
4. Bharwa baigan and koki

Recipe of bharwa baigan:

Cut brinjal into circular shape, make a deep slanting slits and put in salted water for half an hour.

Then squeeze water but not completely.

MAKE THE MASALA:

Dry roast fennel seeds, coriander seeds, onion seeds, garlic, green chillies as per your taste, grind them coarsely preferably in hamam dasta (motor and pistol).

To this masala, add little salt not much because brinjal were already soaked in salted water, some turmeric, asafoetida, dry mango powder and coriander leaves.

To this add 4-5 drops of mustard oil or any vegetable oil.

Now mix all masalas well and fill slits of the brinjal.

Shallow fry them on medium flame.

KOKI RECIPE:

First mix wheat flour, onion, green chilli, coriander leaves, oil, coriander powder, anardhana powder, cumin seeds and salt well in a mixing bowl.

Add water gradually to make a stiff dough.

Divide into 4 equal balls.

Roll over the counter top carefully, dusting with flour.

Transfer to a hot tawa drizzled with oil. Cook in medium flame.

Flip and cook with little more oil, so that the Koki is not dry.

Once golden spot appears, take off from tawa and serve hot.

  • Have had the pleasure of eating few delicasies preapered by tulika on few gatherings.
    She preperes food with lots of positivity and makes sure everything is perfect.right from selecting the veges which includes the freshness and also the sizing.
    Cleanliness is on her topmost priority and not forget the effection which she generates while cooking is mind blowing.
