INGREDIENTS:
600 gms, Mutton (Curry cut).
200 gms or 1 cup, Desi Ghee.
10-15, Dry Red chilli or Mathania chilies.
20-30 cloves or a hand full peeled garlic.
1 litre, Hot Water.
Salt to taste.
Tantalizing JUNGLE MAAS by CHEF VIMAL DHAR.
METHOD:
STEP 1: Turn on the flame and then place the handi on cooking stove.
STEP 2: Add entire desi ghee into the handi.
STEP 3: Take a ‘silbatta’ and Pound whole garlic cloves roughly. Add them to handi and sauté for few minutes or translucent.
STEP 4: Add a handful of dried soaked red chilies in the handi and fry them well. It will start to ooze out its flavours in few minutes.

STEP 5: Now add Mutton and ‘bhoono’ (sauté) for 15-20 minutes on a low flame.
STEP 6: Add salt as per taste.
STEP 7: Keep water on the other stove to heat up. Allow it to boil and then add the same to the main Mutton vessel. Boil it once and simmer for prolonged cooking .
STEP 8: Keep on stirring in between and check it after 40-45 minutes, glazed tantalizing JUNGLE MAAS is ready to serve.
